Sausage and Bean Casserole recipe

This Sausage and Bean Casserole is the ideal winter dish to prepare if you need to serve a large group of people, such as friends, family, or wh’nau. This substantial dish is loaded with flavor thanks to the chorizo sausages, potatoes, tomatoes, cannellini beans, and peas that are included in its ingredients.

Ingredients:

  • 1 Large onion, cut into wedges
  • 1 cup thawed frozen peas
  • 1 package, divided into thirds, of Countdown’s Own pork and beef chorizo sausages
  • 1 teaspoon brown sugar
  • 1/4 cup of optionally garnished parsley
  • 2 carrots, peeled and coarsely sliced one large potato, skin on, diced into two-centimeter

  • 2 tablespoons of olive oil
  • 2 tsp dried thyme and 2 tsp Dijon mustard
  • 400 grams of cannellini beans, drained, 1 cup of beef stock, and 400 grams of chopped tomatoes.
  • Salt, as desired

Instructions:

  1. Prepare the oven to 180 degrees Celsius (or 160 degrees Celsius with the fan on).
  2. Place the oil, onion, carrot, and potato in a casserole dish that is safe to bake in the oven.
  3. Place the dish, covered, into the oven for fifteen minutes.
  4. The sausages, tomatoes, stock, beans, sugar, mustard, and thyme should all be added at this point. Cover and return to the oven for another thirty minutes, or until the veggies can be easily punctured with a fork to test for doneness.
  5. After removing from the oven, toss the peas into the mixture while seasoning with salt and pepper.
  6. If using parsley, sprinkle it over top before serving.
