Garlicky Ribeye Steak Kabobs
Today I made Garlicky Ribeye Steak Kabobs with roasted asparagus and potatoes! It’s a great recipe to cook on an impromptu summer day when you don’t feel like spending hours cooking. The marinade is classic, simple and delicious.
Ingredients:
- 2 lbs steak cut into 1 1/2 inch pieces
- 2 medium-size potatoes
- 1 bunch of asparagus
- 1/4 cup EVOO
- 10 small button mushrooms
- 1 large red onion
- 1 green bell pepper
- 5 Tbsp minced garlic
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp Worcestershire sauce
- 2 Tbsp chopped parsley
- Pinch of red pepper flakes
Instructions:
- Combine the EVOO, salt, pepper, garlic, onion powder, chopped parsley, Worcestershire sauce, and red pepper flakes in a large resealable bag. Add the steak and marinate for 2 hours overnight.
- Lightly brown the potatoes on all sides in a well-oiled hot pan, then put them aside.
- Toss asparagus with salt, pepper, and extra virgin olive oil before grilling for 3-5 minutes.
- Preheat the grill to medium and spray it with EVOO. Alternate threading the steak, onion, pepper, and potato onto the skewers.
- For a medium-well steak, grill for about 3 minutes on each side.
- Serve and have fun!
