Easy Cheesy Spaghetti

Kids adore their quick and simple Cheesy Spaghetti, which can be prepared in under 20 minutes and served as a side dish to a variety of main courses.
I don’t know about you, but I love weeknight recipes. These are the kind of recipes you serve on a whim for dinner because it involves nothing more than grabbing a few ingredients from the fridge and pantry and then heating them together in a pan until hot. This Easy Cheesy Spaghetti is just that – easy and quick to make.

Ingredients:
  • 12 ounces spaghetti
  • 2 tsp dijon mustard
  • 1/4 cup butter
  • 3 tablespoons flour
  • 2 cups milk
  • salt and pepper to taste
  • 2 ounces cream cheese
  • 2 cups sharp cheddar shredded
  • 1 cup white cheddar shredded
Instructions:
  1. According to package directions, cook spaghetti. Drain the water in a colander.
  2. Over low heat, melt butter in a large skillet. Cook, whisking constantly until the sauce is smooth and faintly bubbling about 2 minutes. Whisk in the milk and Dijon mustard slowly.
  3. Cook, stirring often, over low heat until the sauce has thickened, about 5 minutes. Continue to simmer over low heat, stirring frequently, until the cream cheese has melted. Slowly stir in both cheddars until they are completely melted.
  4. Toss with the cooked pasta and serve right away.
