Macaroni Salad

This is a classic, delicious, and super easy pasta salad recipe! Made with classic staples including celery, red peppers, and onions and dressed with a simple creamy mayonnaise sauce, this is guaranteed to be a hit in every cookout and luck available this year!

  • 8 oz macaroni noodles
  • ⅓ cup thinly sliced celery
  • ½ cup gherkins
  • 2 large hard-boiled eggs
  • ½ red pepper
  • ⅓ cup red onion
  • Macaroni Salad Dressing
  • ¾ cup mayonnaise
  • 2 Tbsp sweet pickle juice
  • ¼ cup sour cream
  • 1 Tbsp Apple cider vinegar
  • 2 tsp dijon mustard
  • 1 Tbsp granulated sugar
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper optional
  1. Prepare macaroni noodles as directed on the package. Drain and rinse with cold water immediately, then drizzle with a teaspoon of olive oil and mix gently to prevent the noodles from sticking together as they sit.
  2. Combine macaroni noodles, sweet pickles, red pepper, celery, red onion, and eggs in a large mixing dish. Stir until everything is completely blended.


For the dressing

  1. In a medium-sized mixing bowl, add mayonnaise, sour cream, Apple cider vinegar, sweet pickle juice, sugar, dijon mustard, salt, pepper, garlic powder, and crushed red pepper (if using) to make the macaroni salad dressing. Mix until all ingredients are homogeneous.
  2. Toss the macaroni salad items with the dressing until everything is well incorporated.
  3. Cover the bowl and chill macaroni salad for at least one hour for optimal flavor.
  4. Before serving, give it one more stir.
  5. Enjoy.
