Cilantro-Lime Shrimp Tacos

There’s just something about tacos that makes us all so happy. Somehow, they manage to be both healthy and indulgent at the same time. And cilantro-lime shrimp tacos are just that healthy and indulgent! These tacos are full of flavor from the cilantro-lime shrimp. The best part about this recipe? You can get everything ready ahead of time, so on taco night, all you have to do is assemble!

Ingredients:

FOR THE TACOS

  • 1 lb. shrimp, peeled and deveined
  • Juice of 3 limes
  • Zest of 1 lime
  • 2 garlic cloves, minced
  • 1 Tablespoon olive oil
  • 1/2 Teaspoon cumin
  • Kosher salt
  • 2 Tablespoon freshly chopped cilantro, plus more for garnish
  • 8 Tortillas, warmed, for serving

FOR THE CABBAGE SLAW

  • 1 cup shredded green cabbage
  • 1/2 avocado, thinly sliced
  • 1/4 cup cilantro
  • 1/4 red onion, thinly sliced
  • 2 Tablespoon hot sauce
  • Juice of 1 lime
  • 1 Tablespoon extra-virgin olive oil
  • 1/3 cup Duke’s Mayonnaise
  • FOR THE GARLIC-LIME MAYO
  • Kosher salt
  • Zest of 1 lime
  • 1/2 Teaspoon garlic powder
  • Kosher salt
Instructions:
  1. In a large mixing bowl, combine lime juice, garlic, cilantro, olive oil, cumin, lime zest, and salt. Cover with plastic wrap after adding the shrimp. Allow marinating in the refrigerator for 20 minutes.
  2. To make the slaw, put all of the slaw ingredients in a large mixing bowl. Season with salt and toss lightly to mix.
  3. To make the garlic-lime mayo, put all of the ingredients in a medium mixing bowl. Season with salt and whisk again.
  4. Preheat the grill pan or grill from medium to high heat. On the grill, Grill the shrimp for 2-3 minutes on each side until the shrimp are pink and opaque.
  5. To assemble the tacos, top each with a scoop of slaw, a few shrimp, and a drizzle of the garlic-lime mayo. Serve with cilantro as a garnish.
  6. Enjoy.
