Ingredients:
- 2 tbsp olive oil
- 1 1/2 lb fresh cabbage chopped
- 3 stalks celery diced
- 1 large yellow onion diced
- 4-5 garlic cloves minced
- 2 large carrots peeled & chopped
- 1 large green bell pepper diced
- 5 1/2 – 6 cups vegetable broth I prefer low sodium
- 14.5 oz canned diced tomatoes
- 1 tbsp Italian seasoning
- 1/2 tsp coarse black pepper
- 1/2 tsp salt

- Drizzle 2 tablespoons of olive oil in a large saucepan or skillet and place over medium heat.
- Add onions, celery, and sweet pepper.
- Cook until transparent.
- Next, add garlic and cook for 1 minute.
- Now pour into the vegetable broth.
- Add cabbage and carrots, then stir.
- Once you put the whole cabbage in the pot, add the tomato cubes (along with the juice).
- Sprinkle with all the spices, then stir the ingredients.
- Cover the pan with a lid, and cook for 15-20 (depending on how tender the cabbage you like).
