Ingredients:

  • 2 tbsp olive oil
  • 1 1/2 lb fresh cabbage chopped
  • 3 stalks celery diced
  • 1 large yellow onion diced
  • 4-5 garlic cloves minced
  • 2 large carrots peeled & chopped
  • 1 large green bell pepper diced
  • 5 1/2 – 6 cups vegetable broth I prefer low sodium
  • 14.5 oz canned diced tomatoes
  • 1 tbsp Italian seasoning
  • 1/2 tsp coarse black pepper
  • 1/2 tsp salt

  1. Drizzle 2 tablespoons of olive oil in a large saucepan or skillet and place over medium heat.
  2. Add onions, celery, and sweet pepper.
  3. Cook until transparent.
  4. Next, add garlic and cook for 1 minute.
  5. Now pour into the vegetable broth.
  6. Add cabbage and carrots, then stir.
  7. Once you put the whole cabbage in the pot, add the tomato cubes (along with the juice).
  8. Sprinkle with all the spices, then stir the ingredients.
  9. Cover the pan with a lid, and cook for 15-20 (depending on how tender the cabbage you like).
