Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels, then chop.
Mix the Salad: In a large bowl, combine the broccoli, cauliflower, corn, and bacon. Add the shredded cheese.
Dress the Salad: In a separate bowl, mix the sour cream (or Greek yogurt) with the ranch dressing until smooth. Pour over the salad and toss until everything is well-coated. Season with salt and pepper to taste.
Chill: For best flavor, cover and refrigerate the salad for at least an hour before serving.
Serve: Garnish with optional chives, parsley, or green onions before serving.
Notes
Vegetarian Option: Substitute bacon with smoked tempeh or crispy chickpeas for a vegetarian version.
Make-Ahead Tip: Prepare the salad components ahead of time but mix in the dressing just before serving to maintain texture.
Customization: Feel free to add or substitute ingredients based on preferences. For a lighter version, use Greek yogurt instead of sour cream and add more vegetables like cherry tomatoes or sliced bell peppers for extra color and nutrition.
