Instructions
Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, cook the ground beef over medium heat until browned. Season with salt and pepper. Drain any excess fat and set aside.
If using, sauté the onion (and any other vegetables) until soft. Mix into the ground beef.
Layer half of the sliced potatoes at the bottom of the prepared baking dish. Season with salt and pepper.
Spread half of the beef mixture over the potatoes, then sprinkle with half of the cheese.
Repeat the layers with the remaining potatoes, beef, and cheese.
In a small bowl, whisk together the condensed soup and milk until smooth. Pour this mixture evenly over the top layer of cheese.
Cover the dish with aluminum foil and bake for 1 hour. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
Let the casserole stand for 5 minutes before serving.

For a lighter version, substitute ground turkey for beef and use low-fat cheese.
