Description

A creamy, fruity no-bake Raspberry Tiramisu Recipe made with layers of raspberry-dipped ladyfingers, fluffy mascarpone cream, and fresh raspberries.


Ingredients

  • 250g mascarpone cheese
  • 1 cup cold heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries
  • 23 tablespoons sugar
  • 1 tablespoon lemon juice, optional
  • 23 tablespoons raspberry jam or raspberry puree
  • 2430 ladyfingers
  • 1 cup raspberry juice or raspberry syrup, for dipping
  • Fresh raspberries, for garnish
  • White chocolate shavings or fresh mint, optional garnish

Instructions

  1. Prepare the raspberry sauce by gently mashing the raspberries with sugar, lemon juice, and raspberry jam or puree until slightly juicy and flavorful.
  2. In a large bowl, whip the cold heavy cream until soft peaks form.
  3. In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture until light, fluffy, and fully combined.
  5. Quickly dip each ladyfinger into the raspberry juice or syrup for 1–2 seconds, making sure not to over-soak them.
  6. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
  7. Spread a generous layer of mascarpone cream over the ladyfingers, then spoon part of the raspberry mixture over the cream.
  8. Repeat the layers with remaining ladyfingers, cream, and raspberry mixture, finishing with a smooth cream layer on top.
  9. Cover and refrigerate for at least 4 hours, or overnight for the best texture and flavor.
  10. Before serving, garnish with fresh raspberries, white chocolate shavings, or fresh mint if desired.

Notes

  • Do not over-soak the ladyfingers, or the tiramisu may become soggy.
  • Use full-fat mascarpone for the creamiest texture.
  • Chill overnight for the best flavor and structure.
  • Frozen raspberries can be used, but they should be thawed and drained well first.
  • For an alcohol-free version, use raspberry juice or syrup instead of liqueur.
  • Store covered in the refrigerator for up to 2–3 days.
