Description

This Oreo Ice Cream Sandwich is an easy no-bake frozen dessert made with Oreo cookies and creamy vanilla ice cream, then finished with optional toppings like crushed Oreos, chocolate chips, or sprinkles. It is simple to make, fun to customize, and perfect for summer parties, family treats, or make-ahead desserts.

Ingredients

Scale
  • 24 Oreo cookies
  • 2 cups vanilla ice cream, slightly softened
  • 1/4 cup crushed Oreos (optional)
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup rainbow sprinkles (optional)
  • 2 tablespoons chocolate drizzle or caramel sauce (optional)
  • 2 tablespoons peanut butter or Nutella (optional)

Instructions

  1. Line a baking tray or plate with parchment paper and set it aside.
  2. Arrange 12 Oreo cookies flat side up on the prepared tray.
  3. Let the vanilla ice cream sit at room temperature for 5 to 10 minutes until slightly softened and easy to scoop.
  4. Scoop a portion of ice cream onto each of the 12 Oreo cookies.
  5. Top each with another Oreo cookie and press gently to form sandwiches.
  6. If desired, roll the edges in crushed Oreos, mini chocolate chips, or sprinkles. You can also drizzle lightly with chocolate or caramel sauce.
  7. Place the Oreo ice cream sandwiches on the tray and freeze for 2 to 4 hours, or until firm.
  8. Wrap each sandwich individually in plastic wrap or parchment paper and store in an airtight container in the freezer until ready to serve.

Notes

  • Use slightly softened ice cream for easy assembly without breaking the cookies.
  • Work in small batches so the ice cream does not melt too quickly.
  • Do not overfill the sandwiches, or the filling may spill out during freezing.
  • Wrap individually to help prevent freezer burn and keep the sandwiches fresh.
  • Let the sandwiches sit at room temperature for 2 to 3 minutes before serving for a softer bite.
  • You can use other Oreo flavors like mint, golden, or birthday cake for fun variations.
  • Store in the freezer for up to 2 weeks.
