Hawaiian Wedding Cake With Whipped Cream Cheese Frosting
This has got to be the best cake I have ever eaten in my life. It looks like a coconut upside-down cake, but it tastes just so good, that you’ll think you’re on the beach in Hawaii while eating it. I’ve made this cake many times and I’m still amazed at how tasty it is. Yum!
Ingredients:
For the cake you will need :
- 1 cup white sugar
- ½ cup brown sugar
- 2eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 2 cups flour
- 1can pineapple ( 20 once )
- 1 cup finely chopped (or crushed) walnuts
- ¾ cup flaked coconut
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1 tsp salt
For Whipped Cream Cream :
- 1 ½ cup heavy whipping cream
- 1 package cream cheese ( 8 once)
- 1 tsp vanilla extract
- 1 cup white sugar
- 1/8 tsp salt
Instructions:
For the cake :
- Mix all dry ingredients in a mixing bowl until combined
- Then, with all of the juice, combine the eggs, vanilla, and crushed pineapple.
- Pour into a well-greased 9-inch round or 9-inch-by-13-inch rectangle pan.
- Preheated treat oven to 350°F and bake for 35–40 minutes (or until the toothpick in the center comes out clean). You may serve it plain or dress it up with a simple whipped cream-cream cheese icing!
For Whipped Cream Cream :
- Whip the cream in a small bowl until firm peaks form; keep aside. Combine cream cheese, sugar, salt, and vanilla in a large mixing bowl. Blend until completely smooth.
- Fold the cream cheese and whipped cream together gently.
- I sprinkled some toasted coconut on top of mine.
